Documented
We traveled to Seki, the city that has made blades for 800 years, to document how its knives are made.
From Seki City, the historic heart of Japanese cutlery, comes this Kotetsu Santoku. The Santoku (meaning "Three Virtues") is the most popular household knife in Japan, shorter and more nimble than a chef's knife, and built to handle vegetables, fish, and meat equally well.
The blade is crafted from high-performance VG-10 stainless steel, a material known for excellent edge retention and high resistance to rust. That makes it a strong choice for home cooks who want professional sharpness without the maintenance demands of carbon steel.
Appearance
The blade carries a 17-layer Damascus pattern overlaid with a hammered (tsuchime) finish. The hammered texture creates small air pockets that reduce friction and help keep food from sticking to the blade while cutting. While machine-formed for precision, each blade is hand-sharpened by artisans in Seki, so it arrives razor-sharp out of the box. The handle is durable, water-resistant Pakkawood with a comfortable grip.
